There are both aerobic and anaerobic acetic acid bacteria among them.
Aerobic acetic acid bacteria
For example, Acetobacter aceti, Acetobacter oxydans, Acetobacter pasteurianus, Acetomonas oxydans, and so on.
Aerobic acetic acid bacteria carry out aerobic acetic acid fermentation. Under aerobic conditions, ethanol can be directly oxidized to acetic acid, which is the aerobic respiration of acetic acid bacteria. The oxidation process is a dehydrogenation and water addition process:
The total reaction equation is: CH3CH2OH+O2=CH3COOH+H2O
Anaerobic acetic acid bacteria
For example, Clostridium thermocidophilus, Acetobacter xylinum, and so on.
Anaerobic acetic acid bacteria carry out anaerobic acetic acid fermentation, in which Clostridium thermophilus can ferment glucose through the EMP pathway to produce 3M acetic acid. Research has shown that this bacterium only has pyruvate decarboxylase and COM, and can use CO2 as a hydrogen acceptor to generate acetic acid.
